We’re told that in Italy you can only find Italian food. When you shop at the markets, you’ll only find fruits and vegetables that are in season. When you go to an Italian restaurant, you’ll have that restaurant’s version of that region’s food. If you’re “in the mood” for Mexican food, Thai food, a burger and fries (aka American food), etc. – forget it. We’re about to spend 65 days in Italy, so it’s time for a burger. A big one.
Great Big Burgers for Two
My guy makes a mean burger. Honestly we’re purists about it and skip the bun and the trimmings, but you should dress this burger up in your favorite style.
1 lb good quality ground beef, preferably grass-fed
2 ounces sharp cheddar cheese, 4 slices 1/8 to 1/4-inch thick
salt and freshly ground black pepper to taste.
Preheat the grill to 400 degrees.
Hand form two burgers about 1-inch thick; seal up the edges by pressing with your palms, spinning and sealing with your thumbs. Be gentle here so you don’t end up with tough burgers. Press your thumb into the center of each burger – this will help them cook evenly.
Grill the burgers for about 4 minutes; flip and grill 4 minutes more.
Season generously with salt and freshly ground black pepper. Top with cheese; divide evenly between the two (even if he argues). Close the lid and cook two minutes more.
Slide the burgers with a spatula to a clean plate. Let them rest for about 5 minutes. Enjoy!
