Ingredients

  • 1/2 recipe Spanish Meatballs
  • 4 cups hot cooked rice
  • 2 small avocados peeled, seeded and cubed
  • 24 grape tomatoes halved
  • fresh cilantro for garnish
  • sour cream optional
  • hot sauce optional

Instructions

Spanish Meatballs

Albondigas Burrito Bowls

  • Add 1/2 recipe of Spanish Meatballs (above) to a small saucepan; cook and stir until heated through.
  • Divide hot rice and Spanish Meatball mixture between 4 bowls. Top each bowl with 1/4 of remaining ingredients. Serve.

Cook time does not include time to cook rice.
