Brie Crostini with Cherries and Arugula

- 12 slices baguette 1/2-inch thick
- olive oil for drizzling
- 6 ounces brie ideally triple cream
- 3/4 cup cherry preserves
- 24 baby arugula leaves
Preheat the oven to 375°F.
Arrange baguette slices in a single layer on a baking sheet. Drizzle slices with olive oil and bake for 8-10 minutes, until golden brown. Set aside to cool completely.
When baguette slices are cool, spread on a thick layer of brie followed by a generous dollop of cherry preserves - 2 or 3 teaspoons. Top each with one or two baby arugula leaves. Serve.
