Mexican Meatballs
Start by making
Mexican Meatballs
for dinner one night and save out 1/2 of the recipe to make these burrito bowls.
Albondigas Burrito Bowls
Add 1/2 recipe of Mexican Meatballs (above) to a small saucepan; cook and stir until heated through.
Divide hot rice and Mexican Meatball mixture between 4 bowls. Top each bowl with 1/4 of remaining ingredients. Serve.
Notes
Cook time does not include time to cook rice.
