Albondigas burrito bowls are loaded with delicious vegetables and Mexican meatballs. A hearty meal that comes together in minutes!

When I see the word ‘Albondigas’, I usually think of Albondigas Soup. It is a favorite soup of mine, but it’s fun to try something new.

With some of the leftover meatballs, I threw together these burrito bowls. They were so good and took very little time to assemble. If you have a rice cooker with a timer, set your rice to be done at meal time. Once the rice is done, you’ll be sitting down to eat in about 15 minutes.

Ingredients  

  • 1/2 recipe Mexican Meatballs
  • 4 cups hot cooked rice
  • 2 small avocados peeled, seeded and cubed
  • 24 grape tomatoes halved
  • fresh cilantro for garnish
  • sour cream optional
  • hot sauce optional

Instructions 

Mexican Meatballs

  • Start by making Mexican Meatballs for dinner one night and save out 1/2 of the recipe to make these burrito bowls.

Albondigas Burrito Bowls

  • Add 1/2 recipe of Mexican Meatballs (above) to a small saucepan; cook and stir until heated through.
  • Divide hot rice and Mexican Meatball mixture between 4 bowls. Top each bowl with 1/4 of remaining ingredients. Serve.

Cook time does not include time to cook rice.
