Salad recipes make wonderful lighter meals, a delicious way to enjoy your vegetables each day! Salads should go beyond the basic lettuce and tomato variety to exciting options that set your tastebuds dancing. The heart of many salads is the dressing as in Caesar Salad and Carne Asada Steak Salad. Other salads need the simplest of dressings to highlight the other ingredients, as Greek Salad proves.
Then there are salads that are so simple that just one or two ingredients are the star flavors as in Crab Salad. Filled with real lump crab meat and celery and mixed with a creamy mayo dressing, this salad is pretty enough to serve at a dinner party. Shrimp Salad is this way too, needing very little to accentuate its already delicious flavors.
One great thing about salads is that they typically do not take long to prepare. For example, my easy Corn Salad and Creamy Cucumber Salad are summertime classics that take only 10 minutes to get on the table. Nicoise Salad and Fattoush are two other salads that can sub in as sides or main dishes and that take 30 minutes or less to make.
