Albondigas burrito bowls are loaded with delicious vegetables and Mexican meatballs. A hearty meal that comes together in minutes!

So you’ve made all of those Mexican meatballs, here’s what to do with them. Well, some of them anyway. Make Albondigas Burrito Bowls!

When I see the word ‘Albondigas’, I usually think of Albondigas Soup. It is a favorite soup of mine, but it’s fun to try something new.

With some of the leftover meatballs, I threw together these burrito bowls. They were so good and took very little time to assemble. If you have a rice cooker with a timer, set your rice to be done at meal time or serve over Mexican Brown Rice, Mexican Cauliflower Rice or Cilantro Lime Brown Rice. Once the rice is done, you’ll be sitting down to eat in about 15 minutes.

Ingredients  

  • 1/2 recipe Mexican Meatballs
  • 4 cups hot cooked rice
  • 2 small avocados peeled, seeded and cubed
  • 24 grape tomatoes halved
  • fresh cilantro for garnish
  • sour cream optional
  • hot sauce optional

Instructions 

Mexican Meatballs

  • Start by making Mexican Meatballs for dinner one night and save out 1/2 of the recipe to make these burrito bowls.

Albondigas Burrito Bowls

  • Add 1/2 recipe of Mexican Meatballs (above) to a small saucepan; cook and stir until heated through.
  • Divide hot rice and Mexican Meatball mixture between 4 bowls. Top each bowl with 1/4 of remaining ingredients. Serve.

Cook time does not include time to cook rice.

    I was sure this was going to be a soup. I love that too but this is over the top! I’d add some sour cream and chopped spring onions on top but that’s me. I can’t leave anything alone.
