    Greek Salad Dressing

    The key to a perfect Greek Salad Dressing is to keep it simple, just a bit of red wine vinegar, earthy oregano, good olive oil and some salt and pepper. Greek Salad is a delicious medley of sweet and tangy, crunchy and creamy ingredients and needs very little to accentuate the flavors and bring them all together.

    I love to use this Greek salad dressing on classic Greek salads and embellished versions of it like Greek Farro Salad and Greek Potato Salad. But it's a wonderful staple salad dressing too for simple green salads, pasta salads and even as a dip for raw vegetables or a drizzle for vegetables that you've roasted.

    When I show you how easy it is to make, I bet it will become a go-to dressing in your house just as it is in ours. (And don't miss my homemade Caesar Dressing, this honey sweetened Balsamic Vinaigrette, this Strawberry Vinaigrette, or this Champagne Vinaigrette.)

    How to Make Greek Salad Dressing

    Step 1: Whisk red wine vinegar, dried oregano, salt and pepper in a medium bowl.

    Step 2: Add olive oil to vinegar mixture in a slow, steady stream, whisking constantly until emulsified. Serve.

    Ingredients
      

    • ¼ cup red wine vinegar
    • 1 teaspoon dried oregano ideally Greek
    • 1 teaspoon kosher salt
    • ⅛ teaspoon freshly ground black pepper
    • ½ cup extra virgin olive oil

    Instructions
     

    • In a medium bowl whisk together vinegar, oregano, salt and pepper. Whisking constantly, add olive oil in a slow steady stream; whisk until emulsified. Add more salt and pepper to taste. Serve.

      I tend to make a lot of Greek salads in the summer when local tomatoes are at their prime. But trying your salad dressing is a good reason to make one ASAP!

      Nothing beats homemade dressing! I love how they are so quickly to whip up and you can flavour how you like. Plus, no added junk. This Greek salad dressing sounds wonderful. Love the red wine vinegar base. Now I'm in the mood for a Greek salad...haven't had one in ages!

      Since I started making homemade salad dressings a few years ago, I can't go back to store-bought. They are so easy and tasty. And this homemade Greek dressing looks and sounds amazing. Simple ingredients are always best! I'll have to try it some time soon!

      Yum! A quick suggestion that takes about a minute to achieve -- dissolve the salt in the vinegar before you do the other steps. If the salt isn't dissolved, you don't get as smooth an emulsion as you want.

      Hi Marissa! Now I want a Greek salad! I make a Greek pasta salad and this would be perfect! I am a big fan of feta so I put lots of it in my salad. It is so nice to use a few simple ingredients to make something so good. The other good thing is you know what is in it, unlike store bought dressings!

      I love Niçoise salads and Greek salads equally! At a restaurant I typically pick one of these. But I also make them at home, and your vinaigrette is perfect!
