The key to a perfect Greek Salad Dressing is to keep it simple, just a bit of red wine vinegar, earthy oregano, good olive oil and some salt and pepper. Greek Salad is a delicious medley of sweet and tangy, crunchy and creamy ingredients and needs very little to accentuate the flavors and bring them all together.
I love to use this Greek salad dressing on classic Greek salads and embellished versions of it like Greek Farro Salad and Greek Potato Salad. But it's a wonderful staple salad dressing too for simple green salads, pasta salads and even as a dip for raw vegetables or a drizzle for vegetables that you've roasted.
When I show you how easy it is to make, I bet it will become a go-to dressing in your house just as it is in ours. (And don't miss my homemade Caesar Dressing, this honey sweetened Balsamic Vinaigrette, this Strawberry Vinaigrette, or this Champagne Vinaigrette.)
How to Make Greek Salad Dressing
Step 1: Whisk red wine vinegar, dried oregano, salt and pepper in a medium bowl.
Step 2: Add olive oil to vinegar mixture in a slow, steady stream, whisking constantly until emulsified. Serve.

I'm going to have to make this for dinner tonight, Marissa, it's so simple and so perfect. You've got me craving a nice big salad!
Fantastic! Thank you, Kelly!
Nothing beats homemade hands down! I love Greek dressing (but what's not to love, right?), and yours is just perfection! I love that you kept it simple and let the flavors really shine! I will be drizzling this on ALL the things! Pinned!
Love to hear that, Cheyanne!! Thank you so much!
This dressing is super simple yet so satisfying and can be using in a variety of dishes. Simple and homemade is so much better!
Well said, my friend! Thank you!
I hardly ever buy salad dressing from the market anymore Marissa. So much better when they're homemade. Will be adding this flavorful one to my list!
Love to hear that, Mary Ann! Thank you!
I tend to make a lot of Greek salads in the summer when local tomatoes are at their prime. But trying your salad dressing is a good reason to make one ASAP!
I'm the same way, Liz! Nothing like a summer peak tomato!! I'm excited for you to try this!
Nothing beats homemade dressing! I love how they are so quickly to whip up and you can flavour how you like. Plus, no added junk. This Greek salad dressing sounds wonderful. Love the red wine vinegar base. Now I'm in the mood for a Greek salad...haven't had one in ages!
So true! Once you start making your own salad dressings, you can't go back!! Thanks so much, Dawn!
I am a total sucker for a good Greek salad! In fact, now that I think about it, I haven't had a Greek salad in ages. I'm totally going to pick up the ingredients at the store...but I'm making my own dressing this time! This recipe is easy and sounds perfect for that salad! 🙂
Love to hear that, David! Thank you!
Since I started making homemade salad dressings a few years ago, I can't go back to store-bought. They are so easy and tasty. And this homemade Greek dressing looks and sounds amazing. Simple ingredients are always best! I'll have to try it some time soon!
I'm the same way, Leanne. Bottled dressings always taste a little off to me and often have a strange texture. As you said, simple is best!
Yum! A quick suggestion that takes about a minute to achieve -- dissolve the salt in the vinegar before you do the other steps. If the salt isn't dissolved, you don't get as smooth an emulsion as you want.
Thanks, Lizzie! I'll give that a try!
You know, I love Greek salad dressing, but I've never made it at home. As you suggest, I bet it'd be fantastic on roasted veggies.
Thanks, Jeff! It really is great on roasted veggies - add some freshness and zing!
We always tend to think of other dressings before Greek dressing but I don't know why as it's delicious! Thanks for the reminder Marissa! 😀
My pleasure! Thanks, Lorraine!
Hi Marissa! Now I want a Greek salad! I make a Greek pasta salad and this would be perfect! I am a big fan of feta so I put lots of it in my salad. It is so nice to use a few simple ingredients to make something so good. The other good thing is you know what is in it, unlike store bought dressings!
Hi Dorothy! I love Greek pasta salad! And, you're right, this dressing would be just right! I agree about feta - one of our favorite cheeses!
I never buy salad dressing anymore, so I'm always eager to try a new one. Just looking at your pictures makes me crave a crispy, fresh bed of lettuce drizzled with this delicious stuff!! XO
Love how you think, Katherine! Thank you!
We adore salads! My husband eats salad daily and I bet he will love this dressing. Your salad looks terrific with all the colours and flavours.
Thank you!!
I didn't really realize there was a specific Greek dressing. I love oregano so I know I'd be all over this. Feeling inspired, I'm jumping over to your Farro salad now. 🙂
Yay!! Thank you, Valentina!
I love Niçoise salads and Greek salads equally! At a restaurant I typically pick one of these. But I also make them at home, and your vinaigrette is perfect!
Thank you, Mimi! I love both of those salads equally too!
